Our sugar products are made from sugar beets or raw cane sugar. The powdered sugar does contain an unmodified cornstarch to prevent caking.

Brown sugar is made by either "painting" white granulated sugar with molasses or boiling it together. The degree of brown is a result of how much molasses is added, the strength of the molasses flavor and is seen in the color of your finished baked goods. For best results, always store sugar in an airtight container where the air temperature remains the same, preferably in a cool, dry place.

When sugar leaves our refinery it is dry and soft. The most frequent cause of hard sugar is that the moisture in the sugar has evaporated. Changes in the climate in certain areas can also affect the consistency of the sugar. Even though hard sugar is undesirable, it can be softened to use.
One method is to place sugar and a damp paper towel or a slice of bread (or 2) in a jar or plastic bag. Keep it sealed for 1 or 2 days. It should be soft again when opened. For best results, keep sugar in an airtight container where the air temperature remains the same, preferably in a cool place.
In a conventional oven, preheat the oven to 200 degrees F. Place the hardened sugar in a roasting pan, and in the pan with it, place a small baking dish or ramekin filled with water. Cover the pan tightly with aluminum foil and bake for 20 minutes. Remove from the oven, unwrap, and use the softened sugar immediately, as it will re-harden as it cools.
In a microwave, place the hardened sugar in a microwave-safe dish. Add an apple wedge, cover tightly with plastic wrap, and microwave on High for 30 seconds. Let stand for 30 seconds, unwrap carefully, then use. You must use it immediately because it will harden when it cools.

Free-Flowing Brown can be a substitute for any recipes calling for brown sugar. You can use it cup for cup. In addition, Free-Flowing Brown has a little less moisture, so in some recipes you may need to add water or more liquid. In addition, Free-Flowing Brown has a little more honey flavor, which some people prefer.
